Nothing completes a chilly winter or spring morning like a mug of hot chocolate and marshmallows. Am I right? Add in a healthy stack of pancakes and you have a morning that is off to a great start!
This past fall, I happened upon this cute little jar of hot chocolate mix from Silly Cow Farms. Seriously, it looks like a small milk jug from days gone by and I just had to try some! Not only is this ‘real’ hot chocolate(you have to use milk), but it is also non-GMO certified and made without high fructose corn syrup. Yay!
Recently, I awoke with every intention to whip up my kids not only a batch of pancakes, but a mug of hot chocolate each. Problem was, I forgot to buy more milk from the grocery store the day before…uh oh. I had about 1 1/2 cups of milk left and anyone with two kids will tell you that that is not enough to equally share between the two. So, it was decision time. Do I nix the pancakes or the hot chocolate?
That’s when a little lightbulb went off. What if I mixed the two together and made chocolate pancakes? Even better, what if I could add marshmallows to it and get a delightful melted marshmallow surprise center?
After many failed attempts and marshmallow size tests, I am very happy to say that we have perfected the art of the hot chocolate and marshmallow pancake here. 🙂 And, oh, how our mornings have been sweet!
